Ginger
This spicy rhizome is probably familiar to most of us, but its aroma in perfumery depends on how it’s extracted. CO2 extracted ginger is more vibrant and zesty, whereas the essential oil is drier and woodier. Think of the difference between ginger powder and the freshly grated rhizome. Ginger’s zingy spiciness pairs well with cardamom, cinnamon, pepper and citrus.
